Healthy Zucchini Bread

I should do more baking. I used to bake all the time.

zucchini bread recipe

My brother gave me some beautiful little round zucchinis
so I decided to make zucchini bread.

round summer zucchini

I doctored up a basic zucchini recipe to make it a little
more healthy and to call it my own.

zucchini bread with healthy ingredients

Zucchini Bread

2 c. sugar
3 eggs
1/4 c. vegetable oil
3/4 c. applesauce
2 1/2 c. all purpose flour
1/2 c. oats
2  t. vanilla
1 t. baking powder
1 t. baking soda
1 t. salt
2 t. cinnamon
2 c. shredded zucchini... remove the seeds!
1/2 c. sunflower seeds

Cream together the sugar, eggs, oil,
applesauce and vanilla.

Mix dry ingredients together, add to the creamed mixture and beat. (I used the electric mixer)

Add grated zucchini.

Stir in nuts

Pour into two greased and floured loaf pans
Bake at 350 degrees for 45 minutes.
It is so nice and moist!
The kids love it too!

I also made the pedestal dish by gluing a very cool
French plate to the top of a candlestick with E6000.
My dome fit perfectly!

Enjoy!

  4. Oh my gosh Susan! Your bread looks so enticing. We did not grow any zucchini in the garden this year, mostly because Leo doesn't like it. I bet if I made your bread and did not tell him what was in it, he'd never know! I love the cake stand that you made. I have a question. Did you paint the candle holder that you put under the plate?
